How We Make It

Wild Fermentation

We use the ancient and natural method of wild fermentation to create our decidedly delicious, non-alcoholic celebratory beverages in our signature charred oak barrels. Each batch is handmade in small quantities using organic ingredients + local honey from Benicia, California. Some variation between batches is expected.

The Star Ingredient: Fermented Turmeric

Fermented Turmeric

We use fermented turmeric in all of our celebratory probiotic beverages. Historically, turmeric has been used as both a culinary spice and for traditional medicine to treat disorders of the skin, upper respiratory tract, joints and digestive system. Research from the National Institutes of Health suggests fermenting turmeric actually increases the amount of curcumin (main beneficial ingredient) in turmeric and makes it easier for humans to absorb curcumin into their systems, suggesting "its potential application as a functional food ingredient."

Since turmeric is a water-intensive crop, we turned recycled Napa Valley wine barrels into rain water collection barrels. We use this sustainably sourced rainwater to feed our growing turmeric plants. 


Bonus? The residual wine in the barrels mixes with the rainwater, providing the turmeric plants with a healthy dose of nitrogen to help them grow.

Turmeric loves to spread underground as it grows. To keep things tidy and contained, our turmeric is grown in recycled half wine barrels. 


Bonus? The soil interacts with the microbiota on the wine barrels, creating a biodiverse and microbe-rich environment for the turmeric to thrive in.

All of our celebratory fermented beverages are finished in our signature charred oak barrels. 


Just like in traditional winemaking, these charred oak barrels impart a unique, smoky, vanilla and caramel flavor and aroma.
