SCOBY stands for Symbiotic Culture Of Bacteria and Yeast. It’s the living organism that transforms sweet tea into tangy, probiotic-rich kombucha through fermentation.

As kombucha ferments, the SCOBY forms a rubbery, jelly-like “pancake” on top of the brew—getting thicker with each batch. The good bacteria and wild yeast work together to consume sugars and create a naturally fizzy, gut-friendly drink!
