Description

Simple, powerful, and deeply rooted in tradition — fermented garlic honey is one of the easiest and most practical ferments to make at home.

In this hands-on Benicia Fermentory class, we’ll combine fresh garlic cloves and raw honey to create a slow, savory-sweet ferment that naturally transforms over time. As the garlic softens and the honey thins, you’ll learn how fermentation can turn two simple ingredients into something beautiful, flavorful, and incredibly versatile.

This class will also celebrate locally sourced honey and the role of bees in our food system, connecting fermentation back to land, agriculture, and simple seasonal living.

We’ll cover:

  • What fermentation is (and why this one is beginner-friendly)
  • How honey fermentation works
  • Safe jar prep + best practices
  • When it’s ready + how to use it
  • Ways to use garlic honey in dressings, marinades, teas, and everyday cooking
  • Why local honey and pollinators matter

Each guest will leave with their own jar of fermented garlic honey, practical instructions, and confidence to recreate it at home.
